Fennel Orange Salad With Nuts And Raisins
serve 6 people
2 fennels 2 oranges a handful of nuts 1 tablespoon raisins balsamic vinegar extra virgin olive oil salt and pepper
Peel the oranges, cut into thin slices leaving aside half.
Squeeze the juice of half an orange and put the raisins to soak for ten minutes
Meanwhile clean the fennel, cut into thin slices and transfer them into a bowl filled with cold water to preserve their crispness.
Wipe the fennel and make up your salad with orange slices, chopped nuts, raisins.
Season the salad with a tablespoon or two of orange juice (that used to soak the raisins), olive oil, balsamic vinegar, salt and pepper.
